Ingredients:

For the salad

  • 1/2 lb soft, log-shaped goat cheese
  • 8 fresh figs
  • 2 handfuls arugula
  • 4 leaves red-leaf lettuce, chopped
  • 16 fresh basil leaves, cut in ribbons

For the dressing

  • 1/2 cup extra-virgin olive oil
  • 1 Tbsp balsamic vinegar
  • 2 tsp lemon juice
  • 2 tsp honey
  • 2 pinches of salt
  • 1 pinch of pepper

Directions:

For this French-influenced salad, spread the red-leaf lettuce and arugula on a medium plate. Then, cut the log of goat cheese into 12 slices, quarter the figs lengthwise, and arrange both ingredients on the top of the salad.

For the dressing, whisk together all ingredients and drizzle over the top of the salad. Finish the plate off with basil ribbons and serve.
